Where does your passion for food and ingredients come from?
"My passion for ingredients comes from my childhood," Chef Marco reminisces. "Growing up in an Italian home where my father cared deeply about the quality of ingredients instilled in me the importance of choosing them wisely. My family ran old Italian delis in LA, and part of their business was importing authentic ingredients. From an early age, I understood the difference between an Italian tomato and a non-Italian one. It makes a big difference."

Why is your sense of smell important in the kitchen?
"Your sense of smell in the kitchen is incredibly important," he explains. "I love being a chef because it’s one of the only art forms that I know of where I have to perform with my nose, mouth, ears, and sometimes touch. You’re eating that food before you even put it in your mouth—you’re looking at it, you’re smelling it. It creates a moment for you to experience that dish."

"When we cook in our home, the smell usually travels right up into our primary bedroom," he recalls. "The first night we did BLTs using this product, there was no smell. Nothing reached the bedroom at all. I was shocked because it’s a serious smell and hard to remove."
